I made these Brownies to take to the swimming carnival this week, to share with the other parents. They are so good.
350g dark chocolate, chopped
40g butter
2 eggs
2/3 cup caster sugar (superfine)
1 teaspoon vanilla
1/4 cup plain flour (all-purpose)
1/4 teaspoon baking powder
Peanut butter frosting
1 cup icing sugar (confectioner's)
1 cup peanut butter
80g butter
1 teaspoon vanilla
13 cup single pouring cream
Pre heat oven 180c (350f). Place 200g of the chocolate and butter in a small saucepan over low heat. and stir till melted. set aside. Place the eggs,sugar, and vanilla in an electric mixer and whisk till pale and creamy. Stir through the flour, baking powder, chocolate mixture and remaining chocolate and let it stand for 10mins. Spoon tablespoonfuls of the mixture on to a line baking tray. Bake for 8-10mins until puffed and cracked. Allow to cool on tray.
To make the frosting , place sugar, peanut butter, butter and vanilla in a electric mixer and beat for 6mins add the cream and beat for another 2mins. Spread half the cookies with the peanut frosting and sandwich with the other cookie.
