Vanilla and raspberry layer cake

Master M made this cake for my birthday the other day it was so very nice I thought I would share it with you.   



Vanilla & raspberry layer cake 
3 cups plain flour
11/2 tbsp baking powder
4 eggs
11/2 cups caster sugar
350g butter, chopped, at room temperature
250g light sour cream
1/2 cup milk
2 tsp vanilla past
Filling
2x125g pun nets fresh raspberries
1/2 cup raspberry jam
Cream cheese icing
750g spreadable cream cheese 
300ml thickened cream
11/2 cups icing sugar
2tsp vanilla extract

Pre heat oven to 160C or 140C fan. Grease and line 3x20cm round cake tins.
Cream together butter and sugar till pail and fluffy, adding one egg at a time.
Add sour cream, milk vanilla, mix   
Add sifted flour and baking powder combine to mixture. 
Divide batter between tins baking for 30- 35mins.

To make filling place the raspberries in a bowl with raspberry jam ( soften mine in the Microwave) and mix with a fork.

To make icing use a electric mixer beat cream cheese, adding cream, icing sugar and vanilla till smooth and creamy.
Cut the cakes in half adding cream cheese icing than add the raspberries mixture , building the layers as you go. Spread the remaining  cream cheese icing over the cake and chill at least one hour.
