Strawberry Jam with a hint of Lemon.


Strawberry Jam
A girlfriend of mine gave me a very tasty jar of homemade Strawberry Jam, and ever since then I have been wanting to make my own. I looked up recipes and found a very simple one, and added a few ingredients of my own.



1kg fresh Strawberries, hulled
4 cups caster sugar 
4 Tbls lemon juice ( I probably used 8-10 Tbls + the rind of two lemons)
And I used 1 Vanilla pod.
 In a heavy based saucepan add the strawberries, mine were chopped into all kinds of sizes.
Add sugar, lemon juice, lemon rind and vanilla pod.
Bring to a rolling boil, stirring often.
I used the teaspoon of jam on a cold plate to see when it was set.
Transfer into hot sterile jars.
Then a new trick I learnt is to turn the jars upside down for at least 5mins then- invert and listen popping sound when cool.


 I loved the hint of lemon in the jam it made it not so sweet.

  7. I haven't made jam in forever! Are people still sealing the bottles with melted wax before putting the tops on? I've got to look into this! I like store jam less and less, and I'm always wondering what they do to it!
