Peanut Butter Crinkles

I really like to have something home made in the pantry and we all love peanut butter in our house, so the other day I made these Peanut Butter Crinkles, and a batch of Anzac Biscuits Recipe. I know the guys love them as I can see them slowly disappearing. 



Ingredients
125g (4ozs) unsalted butter
1/3 cup (70g/2.5ozs) sugar
1/3 cup (70g/2.5ozs) brown sugar, lightly packed
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon rind
1/3 cup (100g/3.5ozs) peanut butter
1 1/4 cups plain (all-purpose) flour
1 teaspoon bicarbonate of soda (baking soda)
pinch salt

PreparationPreheat oven to 180°C  (350°F/Gas 4).  
Cream together butter, sugars, vanilla, lemon rind and peanut butter until light and fluffy.  Add sifted flour, soda and salt and mix until a stiff dough forms.
Shape heaped teaspoonfuls of mixture into small balls with floured hands, place on a lined oven tray allowing room to spread slightly.  Press biscuits down lightly with a fork, first crosswise then lengthwise, for a crinkled effect.  Bake in oven for 15 minutes, until golden brown.  Remove from oven and cool on tray.

  2. Can I just say YUM! I love anything and everything with peanut butter (though we currently substitute peanut butter with sun butter because of my sons allergies) These look divine!!!

  3. These look delicious. Peanut butter is favourite in our house too! I might whip a batch up this afternoon. I made some doggy biscuits yesterday with pumpkin and peanut butter and Nelson is just as big a fan! Will post later.

  11. Suzie, these look so good! I love peanut butter cookies. I haven't made them in ages and was just thinking about making some kind of cookie soon, so I think PB it is. :)

  12. I'm not very keen on peanut butter but you anzac biscuits look good. Home made biscuits are much nicer but they get eaten too fast!
