Our family has been making this cheese cake for years, it always works and always tastes good.
To make the biscuit base you will need:
1 Pkt of Nice biscuits
about 75 gms of melted butter
Place the biscuits in a food processor and blend till they resemble bread crumbs. Add the melted butter press the crumb mix into a lined 20cm spring form tin. Refrigerate.
Place in the bowl of an electric mixer:
1 Pkt of cream cheese
1 Tin of condensed milk
The juice and rind of 2 lemons
Beat the mixture till soft and creamy. Add to the tin of the chilled biscuits mix. Refrigerate over night.
Enjoy
