Tomato Sauce













Last year a girlfriend of mine gave me a jar of home made Tomato sauce, it was full of flavour, I couldn't wait to make it myself.

Tomato Sauce (with a bit of warmth)
2.5kg ripe tomatoes,  chopped or 3kg of tined tomatoes   
11/2 tsp ground cloves
11/2 tsp ground allspice
3 tsp celery seed
3 tsp dry mustard
500gm sugar
750ml white vinegar
12 fresh hot red chillies or to taste, chopped
1.5kg apples, cored and chopped
4 medium onions, peeled and chopped
6 garlic, peeled and chopped
250gm tomato paste

Put the tomatoes in a bowl, and sprinkle with salt, allow to stand for 11/2 hours. Put the spices and sugar a large pan with the vinegar. Heat, stirring until the sugar is dissolved, then bring to the boil. 
Add the remaining ingredients and simmer gently for 11/2 hours. I used a stick blender and blended it all up when it was finished cooking, this way you don't have to peel the tomatoes and apples or chop things to fine.  Pour into hot sterilised jars.
