Scottish Shortbread

Yesterday I did some Christmas baking, I made shortbread and  fruit mince slice. The shortbread is so easy to make and I add so many different things to it to change it, chocolate chips, coco, cranberries,  just what ever I have in the cardboard.

Scottish Shortbread
250g (9 oz) butter
100g (31/2 oz) icing sugar 
330g (12 oz) plain flour

Pre heat the oven to 150 C / 300 F

Cream butter and sugar until and fluffily. Working in the the flour gradually. Chill for 1/2 then roll out on a lightly dusted work bench  and cut into what shapes you want. Bake in the oven for 20 to 30 minutes.

  5. Your shortbread looks yummy. I usually use semolina along with the four which gives a slightly gritty texture - it really works! Juliex
