Oat,Orange and Ginger Crisps #CreativeCookieExchange



This months theme for the Creative Cookie Exchange is Ginger in any form. When I knew we were cooking with ginger I wanted to share with you these Donna Hay ginger cookies. They are so very tasty and another easy one to make. I have Bloged about these cookies before here



 2 cups rolled oats
3/4 cup brown sugar
3/4 cup white sugar
1/4 cup plain ( all-purpose) flour
2 teaspoons ground ginger
150g butter melted
1 egg, lightly beaten
1 tablespoon finely grated orange rind

Preheat oven to 180C 350F. Place the oats, sugar, flour and ginger, in a bow and mix until combined. Add butter,egg, and orange  mix until combined. Place tablespoon of the mixture onto lined baking trays, leaving room for the crisps to spread. Bake for 10-12 minutes or until golden Allow crisps to cool on tray for 5 minutes, then transfer to wire rack to cool completely. Makes 24.

Chunky Chocolate, Fruit and Nut Cookie Slice #CreativeCookieExchange

The Creative Cookie Exchange theme this month is “Beat the Heat with No Bake Cookies”. It’s summer and too hot to turn on the oven. This deliciously rich no-bake slice is quick and easy to make. I just made use of what was in the pantry, I didn't have and sultanas or raisins, but I did have a bag of dried fruit so I used the apricots and pears. I sent a pice of the slice in the school lunch box and my son said it was great and tasted like rocky road.

Makes about 28 pieces (each about 4cm by 3.5cm).

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

70g butter
125ml (1/2 cup) sweetened condensed milk
250g packet Scotch Finger (shortbread style) biscuits
80g (1/2 cup) finely chopped dried apricots
80g (1/2 cup) chopped white chocolate
86g (1/2 cup) sultanas or raisins ( I used other dried fruit, Pears)
42g (1/2 cup) desiccated coconut
70g (1/2 cup) chopped macadamia nuts

Topping
200g milk chocolate, melted



Line an 18cm by 28cm pan with non-stick baking paper.

Place butter and condensed milk in a small saucepan over low heat, stirring occasionally. Remove saucepan from heat when butter has melted.

Finely crush half of the biscuits in a food processor or blender. Chop the remaining biscuits into small chunks.

Place biscuits (crushed and chopped), dried apricots, white chocolate, sultanas or raisins, coconut and macadamia nuts in a large bowl.
