Mint Chocolate Cookies #Creative Cookie Exchange


This months theme for the Creative Cookie Exchange is Peppermint, it's not something I cook with often. I was trying to think of a peppermint cookie that didn't involve crushed candy canes, when I remembered the After Dinner Mints my Mum and Dad would bring me home after they had been to a dinner party in the 1970. These are like Christmas in your mouth, these cookies are dark, rich and intense. They are soft and a bit crumbly studded with dark chocolate.

About 3 dozen cookies.
Serves: 36
Ingredients
  • 225g (1 cup butter, softened)
  • 1¾ cups sugar
  • 2 eggs
  • 2 tsp peppermint extract
  • 2 cups all purpose flour
  • 1 cup cocoa
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips or dark chocolate chunks
Instructions
  1. Preheat oven to 180°C (350°F). Line 2 baking trays with baking paper.
  2. Using an electric mixer, beat butter and sugar in large bowl until well blended. Beat in eggs and peppermint extract. Gradually add flour, cocoa powder, baking soda, baking powder and salt and beat until well blended. Stir in chocolate chips. Form dough into 1-inch balls I made mine a bit smaller. Place 3cm apart on prepared baking trays. Flatten balls slightly.
  3. Bake cookies until edges begin to firm but center still appears soft, about 9 minutes. Cool on baking trays 5 minutes. Transfer cookies to racks and cool completely.

  1. I love these cookies. I made almost the same recipe over the weekend; I used these seasonal chocolate chips from Nestle that have dark chocolate as well as green minty ones.

  5. I loved those after dinner mints too, and thought of exactly the same thing when I mixed the topping for my cookie. Do you remember Bobbies growing up? I loved those too, especially after they had been in the freezer.

  9. These look delicious! And thanks for baking with us outside of you box! That has been me many other months in the bundt group, so I know how you felt if you don't often bake with peppermint. I would never guess though, these look wonderful!

  11. Mint chocolate cookies? They remind me of After Eights I really love! So I must try them out - I am not sure though whether I get peppermint extract over here. Thanks for this idea anyway! Christa
