Piped Coffee Butter Cookies #CreativeCookieExchange


This months theme in the Creative Cookie exchange, was Wake up from winter with tea or coffee. I was originally going to make these cookies with green tea but couldn't fine any that I needed for cooking, so added coffee instead  but thats OK as I love coffee flavoured cookies and these ones taste great. 



Ingredients
200g cake flour
130g butter, softened at room temperature
30g caster sugar
70g icing sugar
1 egg

*1 tsp coffee extract
*1 tsp vanilla extract (for vanilla flavoured)
* 1g green tea for green tea flavoured)
*20g cocoa powder (for chocolate flavour)

Method:
  1. Mix butter with caster sugar and icing sugar. Beat until light and fluffy.
  2. Add in egg beating well .
  3. Add coffee extract (if using) and beat thoroughly.
  4. Add in cake flour (and green tea powder/ cocoa powder/ vanilla if using) and mix well.
  5. Pipe into desired shapes. (I chilled the dough in the fridge for 15 mins after piping.)
  6. Bake at 190 deg C for 10 mins until golden brown. (I baked mine at 180 deg C for 15 mins.)
  7. Store in air-tight containers after cooling.
